CINDY'S LASAGNA 
This is a recipe I created through experimentation. I knew a woman who always asked me to cook it for her, she said she had tried lasagna from here to Italy and it was the best she had ever tasted. This is a recipe that makes enough for a large family gathering!

1 (16 oz.) pkg. lasagna noodles
1 to 1 1/2 jars thick spaghetti sauce
1/2 chopped green pepper
1 large chopped onion
1 large container Ricotta or small curd cottage cheese
2 cups Parmesan cheese, freshly grated
1/2 tsp. cracked black pepper
2 eggs
1/4 cup freshly chopped parsley
1 large pkg. fancy shredded cheese (about 3 cups)
2 cups mozzarella cheese
1 lb. Italian sausage cooked and chopped
1 lb. ground beef cooked and chopped, then mix meats together
2 cans of mushrooms slices

Sauté onions and peppers in butter or olive oil.

Combine Ricotta or cottage cheese with eggs, Parmesan cheese, cracked black pepper and parsley.

Cook noodles rinse in cold water, drain and separate, set aside, preheat oven to 375°F.

In a large deep non-stick baking pan, layer bottom with spaghetti sauce, about two cups. Next, place a layer of noodles, then sauce until lightly covered, then a thin layer of Ricotta or cottage cheese mixture, meats, onions and peppers, and mushrooms, sprinkle remaining cheeses in layers, one on top another.

When you lay your last layer of noodles, place a thin layer of sauce and (make sure you have saved enough cheeses for the top) over the layer of sauce layer cheeses with the mozzarella on top, bake at 375°F uncovered until the top is golden brown and bubbly.

Very good. However, I didn't like the fancy cheese added - it gave it a cheddar flavor. I would not use it if I make this again. The ricotta and mozzarella would be just right for me. I'd leave out the mushrooms also. I used Prego's Italian sausage with garlic spaghetti sauce, and added a tsp. of sugar to sauce.

Very good recipe. Fresh chopped mushrooms worked much better than canned. Instead of Italian sausage, I just used the Prego described in the other comment.

Fantastic lasagna! I baked at 375°F for 30 minutes and it was maybe a touch too long. 28 minutes would have been better. Next time, though, I'm going to lower heat to 350°F and bake for maybe 40 minutes - this round was just a hair watery.

I love this recipe!!! I printed this out a few months ago and have made it quite often my family loves it. I recently lost the print out I made and couldn't remember where I found it just knew it was named Cindy's lasagna so happy to have found it again. Lasagna on the menu tonight yeah!!!!

Good recipe!!! We loved it; however, I added sour cream to the spaghetti sauce and cottage cheese, which made it a bit creamier and not so stout.

Very good recipe. I baked the lasagna at 350°F for 40 minutes. It turned out a little watery. But I let it stand for 20 minutes and then cut it. Very good. I used fresh mushrooms instead of canned. I only made half the recipe for my husband and me. Just cut the amounts in half. Worked great!

I loved it after I added wild elephant ear mushrooms, I also use cottage and ricotta cheese. Plus 6-8 garlic cloves.
