CRUSTLESS MICROWAVE QUICHE 
4 eggs
1 c. light cream
Pinch each of nutmeg, salt, pepper
1 pkg. (thawed & drained) broccoli or spinach or pea pods, whatever you might like (optional)
4 slices bacon, cooked & crumbled
1 c. shredded Swiss cheese
1 c. shredded cheddar cheese
1/4 c. chopped onions

Mix all ingredients together and pour into lightly greased microwave safe pie plate. Cook, covered, on high 7 to 8 minutes. Let stand 4 to 5 minutes. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I am looking for a crustless quiche. I had one years ago and it was Delicious. This however did not work. I put Easter ham, Green onions, red pepper and cheese. The edges cooked And the middle did not. I cooked it for four minutes longer And let it sit. Was just runny in the middle. I will keep looking for a recipe as this was not it.

Don't miss this one. The light cream is not necessary. Use about 1/4 lb melted light cream cheese instead. For me, there's too much cheese; a half-cup of each suffices, BUT, add about 3-4 tablespoons of good grated cheese like Parmesan or Asiago. Definitely add a can of chopped mushrooms. Another 1/4 cup of chopped onion is needed. Try using equivalent liquid eggs. Makes recipe easier and lower on the calories and cholesterol.

Overall, a recipe worth printing and doing mostly what you want with it. For veggies, I use lots of liquified garlic (whole cloves blended almost to liquid in a blender and sauteed until bottom of pan starts tanning. Add a bit more water). All veggies should be sauteed in the garlic before blending them into the quiche. Add some feta for an extra zing.

This recipe is not fussy. Add/subtract what you want, especially the veggies. Use no more than 4 eggs unless you "overpack" the solid ingredients.

One thing to overcome the runny center... I always stop cooking half way through and bring the cooked eggs along the edge into the center. Then continue cooking. It will still be runny in the center, but will finish setting up during the resting time. If I'm not using the microphone for anything else, I let it rest in there (small space helps keep it warm).

This is a great recipe! The key is halfway through, pause the cooking and draw the cooked edge eggs into the center. Resume cooking and then let stand as per the recipe.

Good idea but I, for one, will go back to using the main oven. I'm not a lover of runny quiche and this has it in the centre, even with lower power setting added.
