EASY BANANA BREAD 
5 ripe bananas
1 (18 1/2 oz.) box Duncan Hines yellow cake mix
3 eggs
1 tsp. vanilla
1/2 c. chopped nuts, optional

Preheat oven to 350 degrees. In large bowl mash bananas and add remaining ingredients. With electric beater, mix two minutes at medium speed. Pour into buttered 5 x 9 inch loaf pan and bake one hour.

Awesome recipe. I have to be honest I thought there was a mistake in the recipe but I made it as is (except I added some cinnamon & I only had 4 bananas). Then I thought, "Oh my, this looks like enough for 2 loaves, it's gonna overflow & make a mess in my oven." I carried on in faith but kept a very watchful eye. It plumped up nicely and didn't overflow! I'm amazed! Perfect use for my over ripe bananas.

Great recipe! I had been looking a long time for an easy banana bread recipe and this one is perfect! I didn't have the yellow cake mix, but I used the vanilla mix and it was delicious! Although I must say, the cake overflowed. I think the size of the bananas make the difference (I used 5; 3 mediums 2 large). I baked it for 1 hr 20 mins (I was watching TV and forgot it) - but it didn't burn and still came out perfect. Next time, I will use 2 pans. I will definitely make this recipe again!

I have been making this recipe for several years, always around Christmas time! People actually call and request it! I do use 2 loaf pans which provides a nice size for gift giving. One thing I modified is that in addition to spraying my pans with non-stick spray...I also sprinkle it lightly with sugar and cinnamon. I also sprinkle sugar and cinnamon "very lightly" on the top prior to baking. This does cause it to sink slightly but it gives it a really nice flavor! Love this recipe!
