BUFFALO NY CHICKEN WINGS | |
1 lb. chicken wings (split at joint with tips discarded) 4 tbsp. (1/2 stick) butter 1/2 cup FRANK'S® RedHot hot sauce 4 cups vegetable oil (for frying) salt and pepper, to taste cayenne pepper, to taste (optional) celery/carrot sticks and blue cheese dressing (for dipping) Add oil to stock pot or deep fryer. Heat oil to 375°F. Add wings. Fry until crispy, about 10 minutes. If you want them extra crispy add about 2 to 3 minutes. While the wings are cooking melt butter and mix with hot sauce. Pour into large metal mixing bowl. Pull wings from fryer. Quickly sprinkle wings with salt and pepper (to taste) and then toss in mixing bowl with tongs. Pour onto serving dish, garnish with celery, carrots and blue cheese dip. Don't forget the napkins! Note: You can add more hot sauce and cayenne pepper for heat OR add more butter for less heat.
