CORN QUICHE 
1 onion, chopped
3 tbsp. butter
1 green bell pepper, chopped
1 1/2 c. cut corn
1/4 c. all purpose flour
2 c. milk
1/2 tsp. salt
Pepper to taste
1 c. shredded cheddar cheese
3 eggs, well beaten

Saute onions in butter until clear. Add green pepper and corn; cover and cook for 5 minutes. Stir in flour and cook and stir for 2 minutes. Add milk, salt and pepper. Stir until just at boiling and beginning to thicken. Add cheese and cook and stir over low heat until melted. Remove pan from heat. Stir in eggs quickly so they won't curdle. Turn mixture into a greased 2 quart baking dish. Bake at 375 degrees for 45 minutes. Serve immediately. Serves 4.
