2 c. sugar 3 eggs 2 tsp. vanilla 1 c. oil 2 c. flour 2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 tbsp. cinnamon 2 c. grated unpeeled zucchini 1 c. raisins 1 1/2 c. nuts Stir together sugar, eggs, and vanilla. Add oil. Mix dry ingredients and add. Beat. Stir in zucchini, raisins and 1 cup nuts. Use cream cheese icing and 1/2 cup nuts on top. | |

Bake 350°F. 9x13 pan. 45 mins or so - till sucks away from the sides of the pan and knife comes out clean. More a cake than cookie. But really good. (I forgot the nuts and didn't ice it and it still turned out great!!!)
