ZUCCHINI PINEAPPLE COOKIES 
1 c. sugar
1/2 c. Crisco
1/2 c. grated unpeeled zucchini
1/2 c. crushed pineapple (drained)
1 egg
1 tsp. baking powder
1 tsp. baking soda
2 c. flour (may have to add a little more)
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1/2 c. raisins
1/2 c. chopped nuts

Mix together sugar, Crisco shortening, zucchini, pineapple and egg. Add dry ingredients and mix well. Add vanilla, raisins and nuts. Drop by spoonful onto greased cookie sheet. Bake 15 minutes at 300 degrees. Ice with powdered sugar with either lemon or orange juice.
