APRICOT MUMBLES 
3/4 cup (1 1/2 sticks) butter, softened
1 cup brown sugar, packed
1 1/2 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 cups rolled oats
12 oz. apricot filling (Solo or Baker brand)

Preheat oven to 400°F.

Mix softened butter with sugar until smooth. Sift flour, salt and baking soda together. Add to butter mixture. Add oats and mix well.

Press 1/2 of dough mixture in greased 9x12x2-inch baking dish. Spread filling and then crumble remaining dough over entire top.

Bake at 400°F for 20 to 25 minutes or until golden brown. Cool and cut into squares.

Variation: Other fillings may be used instead of apricot such as cherry, strawberry or date.

I could not get the recipe to work. The sugar and butter combo was not "smooth"--perhaps the butter should have been melted not soft. I was not able to "press" the dough into the dish as it was too crumbly to hold together. Then spreading the filling was not easy as it kept taking up the "dough". Not sure if there is a solution to any of these issues. Maybe refrigerate the dough before spreading the filling would help. I do have to say that it is very tasty.
