PINEAPPLE ZUCCHINI BREAD | |
3 eggs 1 cup vegetable oil 2 cups sugar 2 tsp. vanilla extract 2 cups shredded zucchini 1 (8 oz.) can crushed pineapple, drained 3 cups all-purpose flour 2 tsp. baking soda 1 tsp. salt 1/4 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 cup raisins 1 cup chopped walnuts 1 cup grated carrots Preheat oven to 350°F. Beat eggs, oil, sugar and vanilla till thick. Stir in rest of ingredients. Pour in greased and floured bread loaf pans. Bake at 350°F for 1 hour. Makes 2 loaves. Submitted by: LINDA W. |
