PINEAPPLE ZUCCHINI BARS 
3 eggs
2 c. sugar
2 tsp. vanilla
1 c. salad oil
2 c. zucchini, peeled, grated and drained
1/2 c. raisins
1 c. crushed pineapple, drained
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda

Combine eggs, sugar, vanilla, oil and zucchini. Blend well. Sift together flour, baking powder, salt and baking soda; add to first mixture. Add raisins and pineapple. Blend well and pour into greased and floured 14x16 jelly roll pan. Bake at 325 degrees for 45 minutes.

CREAM CHEESE FROSTING:

4-6 oz. Philadelphia cream cheese, softened
1 tsp. vanilla
1 or 2 tbsp. milk or cream
1/3 c. butter
2-3 c. powdered sugar

Mix well and frost jelly pan top. DO NOT ROLL.

Delicious! It needs some spice though so only giving 4 stars. I added cinnamon, nutmeg, and pumpkin pie spice.
