JAMAICAN JERK CHICKEN 
3 lbs. chicken (fish or other meat)
6 tbsp. Jerk seasoning
butter, butter or vegetable oil

Available in most West Indian or Hispanic grocery stores/market.

Rub the chicken (fish or meat) with butter, butter or vegetable oil. Sprinkle with jerk seasoning and rub in well. Let it set for at least one hour. Grill on the barbeque or in the oven until done. Add more seasoning for a real spicy dish!
