CARROT CAKE WITH CREAM CHEESE
FROSTING
 
1 c. granular sugar
1 c. dark sugar
4 eggs
1 c. oil
2 c. flour
1/2 tsp. baking soda
2 tsp. baking powder
1/8 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla extract
3 c. grated carrots
1 c. chopped walnuts
1 c. raisins

Cream sugar, eggs, and oil. Add dry ingredients; beat well. Add flavorings. Fold in carrots and walnuts. Bake at 350 degrees for 35 minutes in 9 x 13 pan. Cool cake.

FROSTING:

1 stick butter
8 oz. cream cheese
1 lb. confectioners sugar
3 tsp. vanilla extract

Cream butter and cheese. Add sugar and vanilla until smooth. Frost cake when cooled.
