WHITE CHOCOLATE-MACADAMIA NUT
COOKIES
 
2 1/4 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup butter, softened
3/4 cup sugar
3/4 cup firmly packed brown sugar
1 tsp. vanilla
2 eggs
1 (12 oz.) pkg. white chocolate morsels (do not substitute)
1 cup chopped macadamia nuts

Preheat oven to 375°F.

Combine flour, baking soda and salt; set aside. Combine butter, sugar, brown sugar and vanilla; beat until creamy. Beat in eggs.

Gradually add flour mixture; mix well. Stir in the white chocolate morsels and the macadamia nuts.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake 8-10 minutes.

It tasted REALLY good, BUT:

1) It needs more flour! It was too sticky to drop from the spoon. I added more flour after everything was all mixed together, but that was difficult, and I couldn't add enough. It should have been added prior to the nuts and white chocolate.
2) I used non-stick pan liners, which made a huge difference in getting the cookies off the sheet.
3) They need to cool on the sheet for 3-5 minutes before removing, or they disintegrate and deform, and since I was making them for Christmas boxes, I was not pleased...
4) I ended up sticking the bowl in the fridge overnight to chill, and using an ice cream scoop to get the dough out of the bowl, using a small spoon was killing my hand!

THEY tasted REALLY good, and I will make them again, but I've made notes on my printout of this, so I don't have to get all angsty next time!

OK, so this is now my go-to recipe for white choc. macadamia cookies. And we all love them so much, today I decided to play around with the recipe. I substituted 3/4 cup cocoa powder for 3/4 cup of the flour (so 1.5 cups flour 3/4 cup cocoa powder) and semi-sweet chips for the nuts. Boy are they delicious! But they really need to cool or they fall apart when you try to pick them up. As for the earlier comment someone left about them falling apart, its true. Don't try to pack them. Just enjoy them at home, or give some to your neighbors...

These are very good. I added 1/2-3/4 cup of dried cranberries (even dried cherries work too), this breaks up the sweetness and gives them a festive look. ALL ovens vary, I baked mine for 11 minutes because of my add-in and because my oven is almost older than me.
