WHITE CHOCOLATE MACADAMIA NUT
COOKIES
 
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. unsalted butter, softened
1 c. firmly packed light brown sugar
3/4 c. granulated sugar
2 eggs, room temperature
1 tsp. vanilla
12 oz. white chocolate, cut into 1/4" chunks
1 1/2 c. coarsely chopped macadamia nuts

Cover 2 cookie sheets with wax paper or foil and set aside.

Sift flour, baking soda and salt; set aside. Beat butter until creamy on low speed of mixer. Gradually add sugars and continue beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in flour mixture and vanilla.

Use a 1/4 cup measuring cup to form cookies. Pack dough into cup until level.

Drop onto baking sheets leaving 3 inches between cookies. Flatten dough slightly.

Bake on center rack of preheated 300°F oven for 20-25 minutes or until light brown or edges but slightly, soft in center. Cool for 3-5 minutes in pan and then transfer to wire racks to cool completely.

Makes about 2 dozen cookies.

Very good. Nothing out of the ordinary taste-wise for a WCMN cookie but that's what I wanted. Not 5 stars because the recipe doesn't specify when to add chocolate and nuts (added them at the end of mixing. Worked fine).

I enjoyed this recipe! Being a guy who doesn't cook meals like this often, I did find it pretty easy. I used farm fresh Hawaii Macadamia Nuts from a local farm here in Hawaii, and other fresh ingredients. Great post, and great recipe! Mahalo.

I won't dock the recipe for not saying when to add chocolate and nuts (though I did notice!). Anyone would notice, and most people know those come in at the end. I have used this recipe for over 10 years now. I make some plain for those who don't like nuts, rave reviews all around. I use those round white chocolate wafers, and have gotten lazy - don't cut them or the nuts sometimes but still get accolades every time I make these. Great recipe.
