PEACH MUFFINS 
1 egg, beaten
1 c. milk
1/4 c. melted shortening
2/3 c. sugar
1/2 tsp. salt
1/4 tsp. vanilla
1 tsp. lemon juice
1/4 tsp. cinnamon
2 c. flour
3 tsp. baking powder
1 c. peeled, diced peaches

Blend egg and milk together. Add shortening, sugar, salt, vanilla and lemon juice. Sift together cinnamon, flour and baking powder. Fold into the egg and milk mixture until just combined. Fold in the diced peaches and stir until combined. Fill greased muffin cups 2/3 full with batter. Bake at 450 degrees for about 15 minutes. Makes 15 average sized muffins.
