QUAKER OATS APPLESAUCE OATMEAL
MUFFINS
 
1 1/2 c. oats, uncooked, old fashioned
1 1/4 c. flour
3/4 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 c. unsweetened applesauce
1/2 c. milk
1/2 c. packed brown sugar
1 egg
3 tbsp. oil

Heat oven to 400 degrees. Combine all dry ingredients. Add remainder - mix just until dry ingredients are moistened. Fill muffin cups almost full. Bake 20-22 minutes or until golden brown. Serve warm. (Grease bottom of muffin tins or use paper muffin cups.)

These muffins turned out wonderfully. They have just the right level of sweetness and are really filling. And only 3 Weight Watchers points! Great recipe!!

I've been making these muffins for years, and after much trial and error, I've found that its much better with the following adjustments:

Increase cinnamon to 1 tsp.
Add 1/2 tsp. salt to dry mix
Increase applesauce to 1 1/2 cups
Fold in half a peeled, chopped granny smith apple after. Icing the wet and dry.

I haven't found a better apple cinnamon muffin recipe.
