ALMOST - CABBAGE - ROLLS
CASSEROLE
 
1 lb. ground beef
3/4 c. uncooked long-grain rice
1 lg. onion, chopped
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
1 (28 oz.) can tomato sauce
1/4 c. cider vinegar
2 tbsp. brown sugar, packed
1 tbsp. dry mustard
8 c. cabbage, coarsely chopped (1/2 head)

In large bowl, mix together beef, rice, onion, garlic, salt and pepper. In small bowl, stir together tomato sauce, vinegar, brown sugar and mustard. Layer 1/3 of the cabbage in bottom of 3-quart deep casserole. Arrange half of the beef mixture on top. Cover with another 1/3 of the cabbage. Pour tomato sauce mixture over top, but do not stir. Casserole will be quite full. Cover; let sit at room temperature for about 20 minutes. Bake at 325 degrees for 2 hours, without stirring.

This recipe was incredible! I didn't have enough tomato sauce, so I used spaghetti sauce instead, but that was the only change I made. My son, who doesn't like cabbage (or any other green vegetable), absolutely loved this casserole! He raved all night about it! I can't wait to make it again!

I've been making this recipe for years... forgot how much vinegar and found the recipe here... HAPPY to remember it. I love it so much.... I sub white rice with brown rice... Great meal, almost like how grandma used to make her cabbage rolls.

Great recipe, the cider vinegar adds great zippy flavor. I used diced tomatoes instead of sauce, turned out delicious.

This is super easy, has a good taste worth making.

I used half cup of vinegar, more like 10 cups cabbage, tablespoon dry mustard, and as I had no onion or garlic used 1 tablespoon each of dry.

This time of the year you can pick up a huge cabbage for a dollar, and this recipe helps make use of the cabbage, surely a cheap meal.

I skipped the brown sugar, mustard and vinegar, and just added powdered beef stock and mushrooms. Its also nice over rice noodles!
