JPS DECONSTRUCTED CABBAGE ROLL CASSEROLE | |
1 lb meatloaf mix (beef, pork, veal) 1 small head cabbage ˝ sweet onion diced 4 cloves garlic sliced 1 can petite diced tomatoes, drained 2 small cups Uncle Ben’s instant wild and brown rice 1 small can tomato sauce Quarter the cabbage and boil in large pot until tender (about 7 minutes). Strain water from pot then remove and discard cabbage core and chop cabbage leaves into chunks and set aside. Sauté onion and garlic lightly in the same large pot with a pat of butter or olive oil. Add meatloaf mix, breaking up into small pieces and sauté until browned. Turn off flame. Add cooked rice and mix thoroughly. Add tomatoes, continuing to mix well. Finally, add and mix in chopped cabbage. Place mix into a 13 x 9-inch baking dish. Heat casserole, uncovered, in a 350°F oven for 40 minutes. After removing from oven, pour heated tomato sauce over top and serve. Submitted by: ShireFox |
