POLYNESIAN CASSEROLE 
1 1/2 lbs. ground sausage
1 c. chopped onion
1 bunch green onions (tops and all)
3 sprigs parsley (chopped or dehydrated)
3 c. chopped celery (tops and all)
1 med. can mushrooms (juice also)
1 1/2 c. uncooked long white rice
2 cans chicken rice soup
2 cans water
1 pkg. slivered almonds

Brown sausage, then drain on paper towel. Place in a casserole dish. Saute onion, green peppers, parsley and celery in the fat from the sausage. Drain these on a paper towel and add to the casserole dish. Add mushrooms, rice, soup and water. Mix well. Cover and bake at 325 for 90 minutes. Remove cover, add almonds and toss gently. Cook another 20 minutes. Remove and serve.
