POLYNESIAN CARROTS 
1/4 c. sweet cream butter
2 c. carrots, sliced 1/4 inch
1/2 tsp. salt
1/2 tsp. nutmeg
1/8 tsp. pepper
3 tbsp. chopped dates
3 tbsp. crushed pineapple, well drained
3 tbsp. cashews

Melt butter in a heavy 2 quart saucepan. Add carrots and seasonings. Cover; cook over medium heat, stirring occasionally, until tender (6-8 minutes). Stir in dates and pineapple; heat through. Garnish with cashews. Serve immediately.
