DISAPPEARING CARROT-BRAN BREAD 
3/4 c. butter, melted & cooled
3 eggs (or 3/4 c. Egg Beaters)
3/4 c. Nabisco 100% Bran
1 3/4 c. flour
1 c. sugar
1/2 c. raisins (or chopped dates)
2 tsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. baking soda
1 1/2 c. coarsely grated carrots

Beat butter and eggs at medium speed until blended. Stir in Bran. Let soak 5 minutes. Combine dry ingredients. Add to bran mixture. Add carrots and raisins. Bake in 9"x5" loaf pan at 350 degrees for 50 to 55 minutes. Remove from pan and cool on wire rack.
