QUICK BLACKBERRY COBBLER 
1/2 cup milk
2 tsp. oil or melted butter
1/3 cup sugar
1 cup pancake mix (Bisquick)
2 cups black berries
2/3 cup sugar
1 cup water

Mix first 4 ingredients and put into a greased 2-quart casserole. Mix berries, sugar and water. Pour over batter.

Bake at 375°F about 45 minutes. If using canned or frozen sweetened fruit, omit sugar and use juice in place of water.

About 8 servings.

I can't figure out why you would use water...I was wondering if I was supposed to soak the blackberries and then drain? I got worried I'd be wasting my whole cobbler by pouring watered down blackberries on top of the batter, so I didn't follow the directions. Could someone tell me what happens to the water if the recipe is followed? Thanks

Hi Jayne,

The water combined with the sugar makes a syrup, and the blackberries help flavor the syrup, much like what you would have if you had opened a can of blackberries.

This recipe was great, quick and easy. Had to read it a couple of times to make sure I understood the directions. The batter was poured in pan first, then topped with berry mixture. However, the batter mixture comes to the top. It looked and tasted so good my guests could not wait for it to cool down. We topped it with ice cream and it was delicious.

Oops, I thought maybe the recipe was typed wrong so I put the batter on the top. It's in the oven cooking now, let's hope I didn't goof up. :) Next time I'll read the comments under the recipe before I "correct it"!

I used hand picked frozen blackberries. I let them thaw and prepared as directed. I too was concerned about adding that much water, but it came out perfectly. The batter rises to the top while cooking and the berries gel to a jam like consistency. I also doubled the recipe and used a large 4 quart glass pan (like an over sized cake pan) I doubled all of the ingredients and baked for 45 minutes at the suggested temperature. Delish!!!!! Thanks for sharing the recipe, will definitely make it again!

This recipe is awesome! I used fresh, big juicy Black Berries. I did double the recipe, and add a tsp. of salt to the bisquick mix. I used a stoneware baking dish, (you don't grease those.) I also added some (1 tsp) cornstarch to the water mixture, as another reviwer suggested. I made some homemade whip cream. Delicious!

This is so simple and a great recipe. I made a few changes. Use 2/3 to 3/4 cups of water instead of 1 for a thicker fruit. Also use BROWN SUGAR instead of white in the batter. It was AMAZING.

I will only say this is excellent because I had my husbands approval. The only thing he did not like about this recipe is that he felt like the crust was a bit too sweet, so the next batch will have a little less sugar.

Definitely needs less liquid. I used frozen berries (Mixed and blue), and the crunchy crust that comes to the top is awesome...but there's so much liquid in the bottom, it makes the 'crust' soggy. We still ate the whole thing so it couldn't be THAT bad. :)

Super yummy! Sooo super easy! Read the reviews so I stirred some cornstarch into the sugar (1 tbsp.) before adding berries and water. Also, I put a few pats of butter on top of the berries and sprinkled about 6 drops of lemon juice - came out SO GOOD!
