QUICK BLACKBERRY COBBLER 
1/2 cup milk
2 tsp. oil or melted butter
1/3 cup sugar
1 cup pancake mix (Bisquick)
2 cups black berries
2/3 cup sugar
1 cup water

Mix first 4 ingredients and put into a greased 2-quart casserole. Mix berries, sugar and water. Pour over batter.

Bake at 375°F about 45 minutes. If using canned or frozen sweetened fruit, omit sugar and use juice in place of water.

About 8 servings.

Yum! My husband and I are empty nesters so I need to learn to make smaller portions. I made this in small souffle' dishes. I filled them 1/3 with batter and then spooned blackberry mixture on top until the souffle' dish was 1/2 full. I used a little less water in the berry mixture.

I have made this several times, with success. Yes, you pour the water/sugar/blackberry mix ON TOP of the batter layer. The batter bubbles up through. It just works! Sometimes when i'm mixing the berries, I smash a few with the back of my spoon and it makes for a more pronounced and swirly color. Enjoy!

While living in WA, we had wild blackberries bushes growing in my community. One season I picked about 70c of blackberries. Suffice it to say I made BB cobbler OFTEN. Some changes I made were adding a touch of cinnamon and of course vanilla. But otherwise, this recipe was my "STAND BY" for cobbler! THANKS for sharing it!

This is the BEST ever cobbler recipe. I was skeptical at first too about the water, but I followed it to a t.and it came out delicious. I did bake mine 1 hour as I forgot to take it out on time---but no harm --was just a golden brown.
I would give it a 5 x 2.
