FUNNEL CAKES 
2 beaten eggs
1 1/2 c. milk
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 c. cooking oil (for frying)
Powdered sugar (for topping)

Mix all ingredients together. Heat oil in skillet to 360 degrees. Put index finger in bottom opening of funnel. Add 1/2 cup of batter. Remove finger and let batter flow into skillet with circular and spiral shapes.

Fry until golden brown. Using a wide spatula or tongs turn cake carefully over, cooking other side to a golden brown. Serve on paper plates (too absorb grease) and sift powdered sugar on top and serve. P.S. Batter too thick add a tablespoon or 2 of milk.
