MOM (LYNNE'S) "GRAVY" (ITALIAN
TOMATO SAUCE)
 
2 cloves garlic
1 (12 oz.) can tomato paste
1 can water (use empty paste can)
2 (28 oz. ea.) cans crushed tomatoes
1 (28 oz.) can tomato sauce or puree
fresh basil
Italian seasoning, parsley, salt, pepper
2 tsp. sugar
Parmesan or Romano grated cheese
meatballs & Italian sausage

Brown garlic in olive oil in bottom of large saucepan. Add one can of paste and one can of water. Stir. Add remaining cans of tomatoes and spices (amounts to your taste) and let simmer for 3 1/2 to 4 hours.

In the meantime, fry or broil meatballs and sausage. Let meat cook in sauce for at least hour.

The large amount this makes is great for freezing leftovers in 1-quart containers.

If your looking for a great Italian Gravy DON'T GO ANYWHERE ELSE. This is it. I spent most of my day making this recipe and when all was said and done I would have done ten more times if I had to it was GREAT this was absolute greatest thing I have ever cooked. I don't know if I will ever find any recipe better than this for anything. When I was done eating I was nearly in tears because I couldn't eat any more. You want a great recipe, stop looking here it is. The tecture of the gravy is a little thin but that is all taken care of by the romano cheese. I added a few more spices to mine but that wasn't nessasary I did it because I like a certain kind of spice. All in all like I've said a couple times already, the best.

As a second generation Italian from southern Italy, we of course make gravy every Sunday. This recipe is close but not authentic. Take away the italian seasoning and add 2 tbs. sugar (to cut the acid in the tomatoes) then omit the tomato paste and your pretty close to being authentic.

WOW!!! Couple canned tomatoes & some fresh herbs & this is by far a yummy recipe!!! Followed the recipe for the most part & it turned out DELISH!!! Very easy!!! Added fresh diced up mushrooms & squash... trust me, I will only use jar sauce in a pinch after trying this!! Thank you!!! Using it to make homemade Eggplant Parmesan... I'm sure I'll be asked to make this dish again!
