MOM DOLLY'S MEATLOAF | |
I DO NOT LIKE MEATLOAF, BUT I love this recipe. It is my second Mom's (Dolly) own recipe. 2 lbs. ground beef 1 large bottle of ketchup 14.5 oz. can of Hunts diced tomatoes (peppers, celery, onion) 2 eggs oats (1 minute oats) brown sugar ginger 1 large or 2 medium size onions 2 large green peppers vinegar mustard salt and pepper Meat: Preheat Oven to 375°F. In a large size bowl, mix well 2 beaten eggs, 1 large chopped onion and 2 large chopped green peppers, 2 handfuls of 1 minute oats (not too much oats), and not quite 1/2 tsp. of ginger, salt and pepper. Save a little of the green peppers to sprinkle on top of meatloaf when done, if desired. Mix that very well with 2 lbs. of ground beef. Mold and place in casserole dish with about 1/2" of water on bottom. Sauce: In a separate bowl, mix a large bottle of ketchup with a capful of vinegar, about 1 tablespoon of mustard and at least 1/2 cup of brown sugar (or to desired taste). Spread sauce over top and sides of meatloaf. Reserve the remaining sauce, saving plenty for basting during baking, and some to add on the loaf when serving. Cover meatloaf and bake for 2 hours at 375°F. Half way through the cooking time, drain most of the water off and add the can of diced tomatoes around the meatloaf. Also, baste with the leftover sauce mix 2 or 3 times during baking, making sure that the top is covered with sauce. Uncover 15 minutes before done. If desired, sprinkle some chopped green peppers on top after the final basting and after the meatloaf is uncovered. Keep leftover sauce for servings and for ladling over the mashed potatoes. Serve this meatloaf with mashed potatoes to all your friends and family who claim not to like meatloaf. This will change their minds! Submitted by: Cheryl Stephen |
