“MOMS EASY MEAT LOAF” IS IN:

MOMS EASY MEAT LOAF
2 pounds ground beef
1 egg
1/4 cup milk
1 cup ketchup
1 cup brown sugar
1/4 cup prepared mustard
.

Mix beef, egg, and milk together. Then press firmly into a 2 quart casserole dish and set aside. Mix remaining ingredients.

Spread some of the ketchup mixture over top and sides of loaf then put into a preheated oven set at 350°F for 20 minutes.

Take loaf out, drain most of the juices, and put remaining sauce on. I usually cut my loaf into serving pieces and spread mix between pieces and sides, then return to oven for 10 more minutes.

The first time I cooked this it was AWESOME!!! I have tried cooking it two or three more times and I am having a hard time getting it cooked all the way. Any suggestions?

I guess 20 minutes per pound but to be sure I use a meat thermometer till 165°F it is perfect. I also mix a little mustard and brown sugar in my "frosting" with the ketchup.

I added 1 cup of regular oatmeal, 2 eggs and 1/2 cup of milk. I stirred the ingredients together. I sprinkled some salt in with the meat. Then I shaped it. If it is still pink put it back in until its cooked through. Try leaving the cover off the meat and cook a half hour longer or 15 minutes longer. Marela Wienandt

I too, also had a problem getting my meatloaf to cook all the way through after the time in the oven was up. My meat was always still very pink mall the way through. I have found I have to cook my meatloaf for 1 hour 30 minutes exactly, and it is perfect.
