PRESSURE COOKER PINTO BEANS 
2 c. dry pinto beans
1/2 lg. yellow onion
2 lg. garlic cloves
1 tsp. oregano
4 sprigs fresh cilantro or 1 tsp. dry cilantro herb
1/4 tsp. cumin
1/4 tsp. pepper
6 1/2 c. water
6 qt. pressure cooker
1 tbsp. salt (optional, added to cooked beans)

Soak pinto in hot water in a covered medium saucepan for 1 hour. Drain beans, put in pressure cooker. Add onion, garlic, and spices plus water. Seal lid of pressure cooker. Cook over medium-high heat for 50 minutes. Release pressure under cold running water. Mash cooked beans. OPTIONAL: Add 1 tablespoon salt to cooked beans.

The kids liked it. It was my 2nd time using my pressure cooker. After I got a double batch going I read another website that said only fill the pan half full for cooking beans under pressure. It also said pinto beans only need 12 min. To cook after the regulator jiggles. My beans were old, so I cooked them 24 min. The other website also said that with beans the pressure should always be natural release, not under cold water. The natural release was supposed to take about 20 min I think, but I didn't time it. I just kept checking to see if it was ready.

I didn't have onion, oregano or cilantro. I added pico (dry red spice) and salt. I didn't mash, but left beans whole. The kids like it not spicy. I ate the beans with salsa.

I've been cooking pinto beans for almost ten years, but never like this. These are seriously the best beans I've ever prepared.

Only thing I did differently was add the salt before cooking, and also added onion powder since I didn't have any onions.

I made the beans a little differently and it turned out amazing. Since I don't like onions, I used 1 tsp. onion powder. It's weird I know, I'm fine with onion powder, just not onions. I also used 1/4 tsp. garlic powder since I didn't have cloves. I used 7 cups water instead and added 2 tbsp. olive oil to prevent foaming. I bring the pressure cooker to pressure by putting it on high until the little thing on top starts rocking, when it does I drop the temp to medium and set my timer for about 37 minutes.

This is my second time using the pressure cooker to make beans so I'm still working out how long to cook them for with my elevation (about 4500) and 37 minutes wasn't quite long enough. Next time I'll try 50 minutes as the recipe says and see how things go.

I now use my Instant Pot... new form of pressure cooker. Soak beans overnight. Into pot with chopped onion, ham hock or your favorite seasoning... plus 4 cups beef broth. This is for a 1 lb. pack of beans. Set timer on pot for 45 minutes. When the time is up - pot reverses and begins to slowly back off or reverse. That is called the "natural release". First time using - I let back off for 55 minutes. BEST pot of Pinto beans I have ever cooked in my life. This pressure cooker can never explode and makes terrific meals. You would not believe recipes available for it..
