ESSIE'S COBBLER 
1/4 c. butter
1/2 c. sugar
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
#2 1/2 (29 oz.) can fruit (I prefer peaches)
1/4-1/2 c. sugar

Blend butter and sugar. Sift flour, baking powder and salt. Mix all above and add milk. Spread batter in bottom of well greased 2 quart casserole. Drain juice off of fruit and add enough water to make 1 cup juice. Pour drained fruit over batter. Sprinkle on sugar and pour on the cup of reserved juice. Bake at 375 degrees for 45 to 50 minutes. The batter rises and comes to the top while baking. Great with cream or ice cream.

This is from a Borden advertisement that was in Family Circle, etc. and it is what many of us of a certain age (baby boomers) grew up on. My mother made it in a big pasta bowl, with a double recipe and a big can of cherries or peaches. Remember to save the juice. Nowadays it is worth the trouble to find non-high fructose fruit, as the taste is much better.

Around 1961 my friend's mom made Aunt Essie's Cobbler. So delicious!! I got the recipe from her & have made my whole adult life. Nobody has ever not loved it! My husband will say "when's Aunt Essie" visiting? It's been awhile!"
I just took her out of the oven!

Unsure where my Mom get her recipe but she made it all her life. I am now sharing the recipe with my 42 year old son. This was such a simple recipe, no eggs needed and easily constructed. Delicious and ready for dessert in a moments notice.

My mother got this recipe in a small Gold Medal Flour recipe book. I can still see it, much battered, much used. She always made blueberry cobbler. So good.
