RICE BALLS | |
2 cups cooked rice, cooled 1/2 cup Parmesan cheese 2 eggs, beaten 1 cup bread crumbs flour 1/4 lb. mozzarella cheese, cubed frozen peas (optional) oil, for frying Mix rice with Parmesan cheese. Shape into cylinders or balls. Place a cube of mozzarella cheese in center of each. Place a few frozen peas, as well, if desired. Dip ball in flour, then egg, then bread crumbs. Fry in hot oil until golden. Serve hot as is or with tomato sauce. Submitted by: Mary |
