RICE BALLS 
2 cups cooked rice, cooled
1/2 cup Parmesan cheese
2 eggs, beaten
1 cup bread crumbs
flour
1/4 lb. mozzarella cheese, cubed
frozen peas (optional)
oil, for frying

Mix rice with Parmesan cheese. Shape into cylinders or balls. Place a cube of mozzarella cheese in center of each. Place a few frozen peas, as well, if desired. Dip ball in flour, then egg, then bread crumbs. Fry in hot oil until golden. Serve hot as is or with tomato sauce.
