ZUCCHINI BREAD/MUFFINS 
3 eggs
2 2/3 c. sugar
1/3 c. brown sugar
1 c. cooking oil
2 c. grated zucchini squash
2 tsp. vanilla
3 c. flour
1 tsp. each: salt, baking powder, baking soda
3 tsp. cinnamon
1/2 to 3/4 c. chopped walnuts

Mix together and set aside: flour, salt, baking powder, baking soda and cinnamon.

Beat eggs, add sugars and beat. Add oil and beat. Add grated zucchini and beat. Add dry ingredients and mix well. Add vanilla and chopped nuts. Mix well.

Can be baked in 2 greased and floured bread pans for 1 hour at 350 degrees or as 24 regular sized muffins at 350 degrees for 20-25 minutes or as 1 dozen large muffins at 350 degrees.

I made some mods so I can't accurately rate the recipe as it is. I added 2 small bananas, 1 extra cup of shredded zucchini, used 1 cup of whole wheat flour and 2 cups unbleached AP, and used one cup of white and one cup of brown sugar (2 cups total). I poured the bread into a 13 x 9 pan and baked it for 30 minutes. The bread was moist, sweet and delicious.
