ZUCCHINI NUT BREAD OR MUFFINS 
3 eggs
1 c. vegetable oil
1/2 c. sugar
2 c. grated zucchini or carrots
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 c. oats
1 tbsp. vanilla
1 c. chopped nuts

Mix well eggs, oil, and sugar. Add zucchini or carrots. Sift flour, baking soda, baking powder, salt, and cinnamon. Add to mixture. Stir in oats, vanilla and nuts. Bake in 350 degree oven. Two 5x9 inch greased pans, 45 minutes, 2 dozen greased muffin tins, 15 minutes. Remove from pans and cool on racks.

Nut bread best refrigerated overnight to slice better. Muffins are fine warm from the oven.

1 slice or 1 muffin = 1 bread and 1 fat (1 teaspoon sugar).

This is more light like a cake when I made it in muffin tins, and no hint of being sweet. It may be better to spread some jam on it when eating, like normal bread if you're looking for some sweetness.
