PEANUT BUTTER ROLL CANDY 
1 1/2 boxes (1 lb. ea.) powdered sugar
1 stick very soft butter
16 oz. jar peanut butter
1 tsp. milk

Mix soft butter and 1 box sugar and milk together with a fork; make soft ball. Pour a coating of sugar on a sheet of wax paper; sprinkle sugar on ball to keep from sticking. Put another piece of wax paper over ball. Roll out the ball thin. Remove top wax paper and spread on peanut butter. Roll up and cut into pin-wheel pieces. Cool in refrigerator about 1 1/2 hours and serve.

Brings back childhood memories as this is a treat that our mom, who hailed from east Tennessee, would make for us kids every now and then. Very sweet... but we regarded it as a very special homemade delight.

My mom was from Tennessee, too, and she made this occasionally for us. Agreed - it is very rich! If my memory is right, it wasn't always easy to roll it and cut it into pieces. However, even if it didn't turn out perfect, it still tasted delicious!

This is a family favorite. It actually drives me crazy when someone refers to it as potato candy - I never heard of that until I was an adult. This candy is delish and never disappoints. I get requests every year for it. It pretty easy to make in bulk and after a few batches you'll develop your own technique..ENJOY!

The reason people call it potato candy is because when I make mine it is made with potato. May taste like this but I don't make mine this way. It is potato, sugar and peanut butter.

This is what I refer to as Kentucky Peanut Butter candy. While I can appreciate it being a Tennessee favorite as well, it always brings me back home. My mother and I would prepare this simple recipe using only powered sugar, milk, butter and peanut butter when I was a child. We would roll it out between 2 sheets of wax paper, and then spread the PB evenly, using the bottom sheet of paper to roll the sweet treat. I would probably dislike the potato variety, and it looks much more complicated to make. Stick with this winner, It will be a favorite. Try using other butters as well, like Sunflower, Almond, and Cashew for nut allergies.

This recipe takes me back to my childhood. I grew up in Northern Ky. We would make it during the Christmas Holiday. We would roll it up and put it in the frig to set before we sliced it. I couldn't wait until it was ready to eat. So good! I never heard of it being made with mashed potatoes until I was an adult. I don't think I will try it that way. If it ain't broke...

My mom made this candy but the powdered sugar was on the inside and peanut butter was on the outside. Has anyone else made it this way? I'd like the recipe if you have it. Mom never had a recipe for anything, it was a little of this and a pinch of that. Well you know the story. lol

One of my most fav aunts use to make this every summer I'd go spend vacation on the farm!
I simply recall powdered sugar, peanut butter and a bit of water. Nothing more. Hardest thing was to wait several hours for to set. Next hardest thing - not to pig out on!

The recipe I have for this peanut butter candy is 1/4 cup karo syrup, 1 stick of butter, teaspoon of vanilla, & box of powdered sugar. Extra powdered sugar for rolling out candy. We would chill the butter sugar mixture for an hour or two, it would make rolling out easier. Then spread the peanut butter over the rolled out mixture, then roll up in wax paper, cut into pieces and chill. This was the same recipe my grandmother and mother used. I only make this once a year at Christmas. So super sweet it hurts my teeth but family seems to love it.
