PEANUT BUTTER ROLL CANDY 
1 med. size potato
1/4 c. evaporated milk
Dash of salt
Peanut butter
1/2 stick butter
1 tsp. vanilla
Confectioners' sugar

Boil potato until done. While hot, mash thoroughly. Add butter, milk, vanilla and salt. Add 2-3 boxes of confectioners' sugar. Roll mixture to 1/4 inch thick on cloth that has been sprinkled with confectioners' sugar. Spread with peanut butter and roll up. Let set for 30 minutes. Slice 1/4 to 1/2 inch pieces.

I am so glad I found this recipe. My mother always made this at Christmas time. The recipe was handed down in our family but I didn't have an exact recipe for it. I plan to make a lot of this to share with friends and family

This is what is called Potato Candy in the South and does look like genuine peanut butter rolls. True peanut butter rolls do not contain potato.

My family always made this, and I make it.. When we moved to Kentucky, no one up here made it with potato. It does not have the same consistency and is much much sweeter without it. As far as I know, true peanut butter rolls can or can not contain potato as it's a frequently done thing (to include the potato) from massive immigration in the Pennsylvania area. The welsh immigration that followed the iron and railroad trade down to Knoxville, Tennessee carried that candy recipe with them. I've made this for friends who have all exclaimed that it's better with the potato.. and it's my daughter's favorite candy.

I grew up in PA and it was always made with potato. Delicious that way! When I moved to FL someone made it for me but it did not have potato in it. Much sweeter without the potato. However, I prefer it in the recipe. Guess it depends on what you grew up with and prefer. Both are good, potato is better in my opinion. Enjoy no matter which way you like it!
