STUFFED GREEN PEPPERS 
8 med. green peppers
1 1/2 lbs. ground beef
2 med. onions, diced
2/3 c. cooked rice
1/2 lb. sharp Cheddar cheese
1/2 lb. Velveeta cheese
Salt and pepper
2 (#1) cans tomatoes

Wash and cut tops off 8 green peppers. Remove seeds. Cook rice according to directions on box.

Mix ground beef, diced onions, cheese, tomatoes, cooked rice and salt and pepper. Stuff green peppers and put in crock pot. I usually add about 1 cup of tomato juice or 1 can diced tomatoes over top of peppers and cook in crock pot for about 8 hours.

You may bake in oven for about 3 hours at 350 degrees. I put a finger of Velveeta cheese in center of each stuffed pepper before baking.
