RECIPE COLLECTION
“OATMEAL RAISIN COOKIES” IS IN:

OATMEAL RAISIN COOKIES 
1/2 cup vegetable oil
3/4 cup light brown sugar
1/4 cup granulated sugar
2 eggs
1/2 cup water
2 cups unbleached flour
1 cup raisins (any kind)
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. freshly grated nutmeg
2 cups quick-cooking oats

Preheat oven to 350°F.

In a saucepan, combine water and raisins, then heat until the water begins to boil, turn off heat and cool. Stir in vanilla.

In a large bowl, mix oil, sugar and eggs. Beat well.

Add raisins and all liquid to mixture. Stir in dry ingredients.

Beat well and stir in oats.

Drop by rounded tablespoonfuls onto greased cookie sheets.

Bake for 10-12 minutes or until lightly golden brown.

Yield: Approximately 4 dozen cookies

These cookies are DELICIOUS! I've never tried softening the raisins before using them in a cookie recipe and even though that extra step takes a bit more time, it seems to make a world of difference in the cookies. My family is usually not oatmeal raisin cookie fans, but I decided to give this recipe a shot for the heck of it and everyone simply ADORES these! Thanks for the great goodies!

I made these and doubled the batch. I omitted the spices and ADDED a bag of chocolate chips ( kids voted for choc added). They are terrific!!!!

hey there, I just finish making the oatmeal raisin cookies yummmi. I didn't have any regular (plain) oatmeal I used apple cinnamon oatmeal it was still good but Girl, they were so EASY can't wait to make it again with the plain one. CHAT!

Yummy!!! I've made only half of this batch, and ended up with 30 cookies. My family doesn't like raisins, so instead of it I added 1cup of chocolate chips. Absolutely delicious cookies!

Softening raisins was a great idea! The raisins in the cookies were plump and sweet. Stayed that way till the last crumb.
