“OATMEAL RAISIN COOKIES” IS IN:

OATMEAL RAISIN COOKIES 
1/2 cup vegetable oil
3/4 cup light brown sugar
1/4 cup granulated sugar
2 eggs
1/2 cup water
2 cups unbleached flour
1 cup raisins (any kind)
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. freshly grated nutmeg
2 cups quick-cooking oats

Preheat oven to 350°F.

In a saucepan, combine water and raisins, then heat until the water begins to boil, turn off heat and cool. Stir in vanilla.

In a large bowl, mix oil, sugar and eggs. Beat well.

Add raisins and all liquid to mixture. Stir in dry ingredients.

Beat well and stir in oats.

Drop by rounded tablespoonfuls onto greased cookie sheets.

Bake for 10-12 minutes or until lightly golden brown.

Yield: Approximately 4 dozen cookies

I added 1/2 a bag of Peanut Butter chips and 3 tablespoons of all-purpose flour, omitted the raisins. They are beautiful! We are at 3400ft elevation. Adding flour is normal for me.

Me and my almost 3 year old grandson made this recipe today. Had him take cookies off the cooling rack and into bowl. Was a chore to teach him he couldn't bite each one before putting into bowl. Didn't have nutmeg and used butter instead of oil. Tastes delicious :)

I added 1/2 cup of walnuts and baked for 12 minutes. Excellent!! I make larger cookies and get 27 or 28 cookies. Stays soft even after being in fridge over-night.

FINALLY! An oatmeal cookie that stays soft even after being in the fridge overnite. I got just 27 rather large cookies and were really delicious. It took 14 minutes on a non-stick cookie sheet. I left out the salt. Doesn't need it.

Just wonderful. Seemed like a lot of raisins, I also added a nice handful of chocolate chips. Strong nutmeg flavor from my old powdered nutmeg, maybe a little less next time. Have never used fresh nutmeg, will have to try it someday.

I made these the first time to give to a neighbor as a welcome to the neighborhood gift. We kept some for ourselves because they were so good. The neighbor loved them too and asked for the recipe. They are moist and delicious.

Very soft and moist. Had to adjust the temp by 15 degrees because of oven and added one shot of Captain Morgan to the raisins.
