SUMMER LIME CHICKEN BREASTS 
4 boneless and skinless chicken breasts (1/2 lb. each)
1/3 c. olive oil
Juice of 3 limes
4 cloves of garlic, peeled and minced
3 tbsp. fresh cilantro, chopped
1/2 tsp. each of salt and black pepper

If cilantro isn't available, use parsley, dill, tarragon, thyme, rosemary, or oregano (1 tablespoon).

Trim fat from chicken breasts and cut out middle tendon; pound between wax paper to flatten slightly. Combine olive oil, lime juice, garlic, 2 tablespoons cilantro, salt, and pepper in bowl. Pour over chicken and marinate 1 hour. Grill or broil chicken breasts for 2 minutes on each side. Remove to platter. (We grill for about 5 minutes each side.)

Serves 4.

I've had this recipe for at least 15 years and really enjoy it. I usually serve the chicken breasts on a bed of rice and sprinkle some of the uncooked herb (cilantro or whatever) over the chicken.
