JAMES' FAMOUS FRIED TURKEY 
4 lbs. turkey wings & drumsticks
1/2 gallon vegetable cooking oil
Creole seasoning to taste

Season turkey heavily with Creole seasoning salt. (Regular seasoning may be used outside of Louisiana.) Let stand for a few hours if possible. Bring vegetable cooking oil to a boil in deep fryer or heavy pot. Batter turkey with flour. Place turkey into hot oil and cook 25 to 30 minutes until golden brown on medium heat. Let batches stand in warm oven on a tray to drain and tenderize as you prepare the rest.
