ZUCCHINI OR CARROT CAKE 
2 c. flour
2 c. sugar
1 1/2 tsp. salt
1 1/2 tsp. baking soda
4 eggs
1 1/2 c. salad oil
1/2 c. chopped nuts
2 c. grated carrots or zucchini
8 1/2 oz. can crushed pineapple, drained
2 tsp. baking powder
2 tsp. cinnamon
3 1/2 oz. can coconut

Combine all ingredients and beat until well mixed. Grease well and flour bundt pan. Bake at 350 degrees for 1 hour and 20 minutes.

CREAM CHEESE FROSTING:

3 oz. cream cheese
1 1/2 c. powdered sugar
1 tsp. vanilla
A little milk
