RED BEANS & RICE WITH SMOKED
SAUSAGE
 
2 tbsp. vegetable oil
1 med. onion, chopped
1 can (4 oz.) chopped green chilies, drained
3/4 c. Mahatma rice, uncooked
1 c. water
1 beef-flavored bouillon cube
1 can (16 oz.) Bush's Best light red kidney beans or Bush's Best red beans
1/2 c. (2 oz.) shredded Monterey Jack cheese
1 lb. smoked sausage
1 tsp. Tabasco brand pepper sauce

In medium saucepan, heat oil over medium high heat; add onion and chilies and saute 3 minutes. Add rice, water and bouillon cube. Bring to a boil. Reduce heat, simmer covered, 10 minutes until rice is tender. Stir in beans, cheese, smoked sausage and Tabasco. Serve warm.

Serves 4.

I used chicken stock instead of the water and beef bouillon but otherwise followed exactly and it was delicious! The whole family loved it.

Made this again tonight as written, except for adding 1/2 tsp. dried minced garlic. I love it. I make this often with a 7 oz package of John Morell's either smoked or polish sausage. I always add garlic gloves. I now use 2 1/2 cups of water, adding an extra beef bouillon t. or cube, as I like to sop up the broth with garlic butter biscuits or serve over cornbread. Garnish with chopped fresh tomatoes and chopped scallions. Sometimes I add White chili beans (Mrs. Grimes brand) to light red kidney beans for extra green chili flavor. Love this recipe as written or as I change it to suit ingredients I have on hand.

I made this tonight and it was a hit. It was easy and very tasty. I omitted the hot peppers for personal preference, added diced green peppers, used regular white rice, and dry beans I had prepped. Marvelous!
