RED BEANS AND RICE | |
1 lb red beans 1 c. white onion, chopped 2 cloves garlic 1 tbsp. oil All purpose seasoning (Creole seasoning) 1 tsp. salt 1 tsp. pepper 1/2 link of pork sausage, sliced 3 c. rice Soak beans 3-4 hours before cooking. Rinse beans. Fill pot with water, pour in beans. Add onion, oil, garlic, seasoning, and salt and pepper. Bring to a simmer. Let cook on simmer for 2-3 hours, checking periodically. If the beans become too thick add water. After 3 hours, add sliced sausage. Let cook another 45 minutes. Serve over white rice. Submitted by: Lexi Sevario |
