RED BEANS AND RICE 
1 lb red beans
1 c. white onion, chopped
2 cloves garlic
1 tbsp. oil
All purpose seasoning (Creole seasoning)
1 tsp. salt
1 tsp. pepper
1/2 link of pork sausage, sliced
3 c. rice

Soak beans 3-4 hours before cooking. Rinse beans.

Fill pot with water, pour in beans. Add onion, oil, garlic, seasoning, and salt and pepper. Bring to a simmer. Let cook on simmer for 2-3 hours, checking periodically. If the beans become too thick add water.

After 3 hours, add sliced sausage. Let cook another 45 minutes.

Serve over white rice.

I prepare my redbeans and rice almost exactly like the above the only thing I do different I brown 2 lbs of ground chuck on the side and add it to the pot about the same time I add the sausage. Since adding the ground meat my family does not like it without it now.
