ZUCCHINI & CARROT BREAD OR CAKE 
3 c. flour
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 eggs, beaten
1 c. sugar
1 c. firmly packed brown sugar
1 c. vegetable oil
1 tsp. vanilla
2 c. zucchini, grated (zucchini & carrots mixed)

Sift flour, cinnamon, salt, soda and baking powder; set aside. Mix eggs, sugars, oil and vanilla. Add sifted ingredients and blend in zucchini. Pour into 2 greased and lightly floured loaf pans and bake for 60 to 70 minutes in a preheated 350 degree oven. Variation: Add nuts or raisins.
