![]() 1/2 cup dark brown sugar, firmly packed 1/2 cup granulated sugar 1/2 cup (1 stick) butter 1 egg 1 tsp. vanilla 2 tbsp. butterscotch schnaps or rum 1 tsp. maple walnut extract or walnut liqueur 1 cup all-purpose flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1 cup uncooked quick rolled oats 3/4 cup chopped walnuts or pecans 1/2 cup raisins soaked in 1 tbsp. rum Preheat oven to 350°F. Combine all ingredients and beat to mix well. Drop cookies 2 inches apart on well-greased cookie sheets and bake at 350°F until light brown, about 8 to 10 minutes. Note: Do not overbake or cookies will be dry. They will seem like they are still slightly underdone, but the cookies will set up as they cool. Submitted by: CM |
