SPICY BLACK BEAN SOUP 
1 large onion, chopped
2 tbsp. olive oil
3 tbsp. cumin
3 tbsp. minced garlic
1 tbsp. red pepper flake
8 cups black beans
2 cups salsa (your favorite)
2 (15 oz. ea.) cans stewed tomatoes, diced (Hunts)

Lightly brown onion with olive oil, cumin, garlic, and red pepper flakes. Add remaining ingredients. Bring mixture to a light boil then allow to simmer on low heat for about 1 1/2 hours.

Serve with a spoonful of dairy sour cream and fresh sliced jalapeno.
