PERFECT PRIME RIB 
Any size prime rib roast, room temperature
Garlic clove
Sesame oil
Salt and pepper

Preheat oven to 375 degrees. Rub roast all over with cut garlic cloves. Rub with sesame oil. Season with salt and pepper. Place roast on rack in middle of oven. Roast 1 hour. Turn oven off. Do not open oven at any time. May be held in oven for several hours. Turn oven on again to 375 degrees for 30 minutes before serving for rare, 40 minutes for medium rare. Works for any size prime rib roast. Ask butcher for a roast to serve the number of guests.

only used a 2.5 lb bone in roast. It was not yet room temp in the middle. (It had been frozen and then thawed in the fridge for a day and two nights.) baked it for one hour as directed and let it sit for about 2 hours-oven temp was down to around 150°F at this point. Roast was medium well/well without the additional 30-40 minute baking time. Conclusion...smaller roasts will take less than the 1 hr initial roasting time.

I did the one hour roast at 375°F for my 2.97 lb roast. Did the one hour rest in the oven. Did not do the additional 30-40 minutes. My roast was pretty much well done. Any more and it would have been cooked to death!
