LIGHT & ZESTY CHICKEN & RICE 
4 chicken breast halves
1/3 c. bottled Italian dressing
2/3 c. uncooked regular rice
1 (16 oz.) bag frozen broccoli, carrots, water chestnuts & red pepper
1 (2.8 oz.) can Durkee French Fried Onions
1 3/4 c. chicken bouillon
1/2 tsp. Durkee Italian Seasoning

Place chicken breasts in 8"x12" baking dish. Pour salad dressing over chicken. Bake, uncovered at 400 degrees for 20 minutes. Place rice, vegetables and 1/2 can Durkee French Fried Onions around and under chicken. Combine bouillon and Italian seasoning; pour over chicken and vegetables. Bake, uncovered 25 to 30 minutes. Top with remaining onions; bake 2 to 3 minutes longer. Let stand 5 minutes before serving. Makes 4 servings. (1 - 2 lb. cut up chicken can be substituted.)

Hi Kjk, I used to make this beginning in the late 80's & everyone who had it loved it. I remember taking it to my BFF when she had broken her arm.
I've been sick/disabled for over 20 years now & it's been a looking time since I've been able to cook. I found it in my recipe book. It seems like I'd cut it out of a magazine & the paper had almost disintegrated after all these years. No surprise there. I could just barely read it, but some words were illegible. I've looked & looked online & so thrilled to find this. What I can't recall is whether I used fresh or frozen chicken. May I ask which you used & whether or not you think I could make it with frozen chick breasts? TIA

I've loved this recipe for years! My kids loved it as well! I got the recipe from a Durkee Onion ad in a Good Housekeeping Magazine in 1986.
I've always used fresh chicken, not frozen. Tonight I'm making it with some large chicken thighs. I've made it with breasts, cut up whole chicken.
