NEVER FAIL PRIME RIB OF BEEF 
Standing rib roast, well marbleized with white fat. Follow these instructions for any size. Let meat stand at room temperature for at least 1 hour. Preheat oven to 375 degrees. Rub meat with salt and sprinkle with pepper. Place meat fat side up in a shallow roasting pan. Do Not Cover. Do Not Add Water. Put roast in oven for just 1 hour. Turn off heat. Do Not Open Oven Door At Any Time After Heat Has Been Turned Off. Regardless of the length of time the meat has been in the oven, 30-40 minutes before serving, turn oven on again to 375 degrees. Cook meat for those remaining 30-40 minutes. Meat will be medium rare.

Perfect procedure. However, for those that have professional stoves, I recommend a slight change; especially if the first cooking is hours away from the final. Professional stoves are better insulated and maintain heat a lot longer. Your first cooking time should be reduced to 50 minutes. I found this to result in a perfect rare/med. rare beef. Whereas, the full 60 minutes results in a medium rare to medium beef.
