SHORTCUT FOR 6-9 POUND PRIME RIB
OF BEEF
 
6-9 lb. prime rib of beef
Garlic cloves, sliced
Seasoned salt
Black pepper
1 c. water

Preheat oven to 375 degrees. Make slits in roast and insert slices of garlic. Season with salt and pepper. Spread garlic on top. Cook, uncovered, for 1 hour. Turn oven off. Leave roast in oven until 1 1/2 hours before serving. Turn oven back on to 375 degrees and cook roast for 1 hour more. Turn oven off. Remove roast from oven; place meat on warm platter and cover with foil. Let stand 1/2 hour before serving. Remove grease from pan. Add hot water and additional seasoning, if needed for au jus. Total cooking time, 2 hours. Roast will be medium.
