CORN FRITTERS 
1 cup all purpose flour
1 tsp. salt
1 tbsp. sugar
1/2 cup milk
2 eggs, beaten
2 tsp. baking powder
1 can or 10 oz pkg frozen shoe peg corn

Sift together dry ingredients. Add beaten eggs, milk, and drained corn. Drop by spoonfuls into hot oil and cook until done.

Just tried the recipe for the first time. Worked really nice. I did not have sweeter white corn, so I used yellow corn. Cooking time was really fast. I would have like it to be sweeter, but that could be from using yellow corn.

The recipe as posted gave me a dinner plate full of fritters.

Next time though I will try creamed corn. I topped them with little butter and pancake syrup. My neighbors liked them too. Makes a nice batch. Thanks !

I have made these for years so Did my mom I use one can of creamed corm but no milk fry then serve with syrup yummy!
